Over the period, a knowledge and approach to the industry has been cultivated that lead to the opportunity to take over the ownership and direction in 2015, of the Brauhaus in Edinburgh in collaboration with business partner Chris Mitchell of Cork & Cask, Edinburgh. Inherited as “a going concern”, the project is utilised as a vessel from which to test and implement ideals of anti-consumerist and commercial practices within modern culture and society.
The bar acts as a platform for innovative and progressive producers sharing similar ideals, focused on an integrity of ‘purpose’, ‘production’, and ‘quality’, across the beer, wine and spirit industries. Advocating an ideal of greater social and cultural accountability, questioning generic tendencies of a brand-conscious, fetishistic marketplace.
